it's weird that a demo can install...
I don't know, I think it's just because having already gone through an install of the program, you don't have to go through an uninstall and reinstall process.

normally demos are for a restricted time, and restricted functions...
Yes. These days it seems many demos give you full functionality, and either allow you to authorize during the trial period or stop working upon expiration... until you authorize. The only difference with Overture that I can see is that you can still use it when it expires, you just can't save or print until authorized. I haven't been through this entire process though.

So you say basically it supercedes the existing version.
Yes, in my case, that's exactly what it did. I already had an authorized version installed, so when I installed the demo, it just updated the build to 5.6.3-3 and everything was fine thereafter. No need to reauthorize or go through a trial or anything. If I want to roll back to an older build then I have to uninstall and reinstall...but no reauthorization is necessary.

I would worry if you say some functions don't work as well, but others better.
Yeah, I know what you mean. It just depends on what it is. I wound up discovering differences over time. One example more recently discussed was the changing of time signatures. In 5.6.3-3, it has different behavioral results than in 5.6.1-2. Each with its own needed workaround. From what I found, 5.6.1-2 seems to be the better of the two for this.

the famous right click for copy/paste I would like back instead of having to go up to the menu
Ahh, that's a nice feature.
There was/is an undocumented pasting feature built into Overture that is really powerful. At least I think it is still undocumented because it had a glitch depending on where you put the cursor in the measure.
Anyhow....what you do is lasso/select the notes you want to paste (so they remain highlighted), then press ALT+CNTRL (or COMMAND+CNTRL), and then mouse click whatever measure you want the notes pasted into. It's wonderful.
Otherwise, instead of going to the menu, you can do the usual lasso/select notes that you want to paste and hit CNTRL C to copy, and then put your cursor where you would like and hit CNTRL V to paste. It takes about a second or two once you're used to it. Or you can assign Paste Special to a key command with added details/features.
Depending on how deep you want to go, and the mouse you have... there are also ways to map key commands to mice.

Also the note/cursor sometimes blanks out on certain lines of the staff while positioning
Do you mean when you raise or lower a staff by dragging it up or down on the score... using the X-Y positioning? Then it reappears when you let go? Not sure what you mean otherwise.
